A friend shared this recipe online this week, and I knew I needed to try it… These Banana Oat Snack Bars were easy to make and I had everything I needed already in our house (I *love* when that happens!).
The best part is that they are DELICIOUS. Briony + I both loved them – and it’s a snack I can feel really good about giving her. (I’m definitely throwing some into my bag for work tomorrow too.)
My recipe notes… I used spelt flour and stuck to the yogurt the recipe called for – it’s such a small amount of dairy, I know I’m okay with it, but I’m sure you could try soy or coconut based yogurt instead if it’s not okay for you. Instead of a full cup of chocolate chips, I used 1/2 cup slivered almonds and 1/2 cup chocolate chips – but I think I might try some combination of nuts and raisins or dried cranberries (or blueberries?) next time. The chocolate was good, just not totally necessary.
